Apricot Danish


As I walked by their display case, this Danish was literally eyeing me down. When I walked up to the case, it seemed less like like a giant eyeball and more like an egg in the middle of a pastry.


One thing that I was a bit concerned about was that the apricot would be dried out and chewy. This wasn't the case. The piece of fruit was neither hardened nor dehydrated from its time in the oven. Its cheesy bed created a barrier that helped prevent either of these thing from happening  that resulted in a delightfully sweet and fruity baked good.
