Spring Roll

While visiting Leigha's aunt and uncle in Colorado, she proposed making our own Spring Rolls. While I've eaten plenty of them in my time, I have never even considered making homemade spring rolls before. Surprisingly, they are incredibly easy to make.
You can find rice paper at an Asian market. They generally come in small dry discs. Once they get wet, you need to move quickly because they get sticky fast. For a sauce, we mixed hoisin and peanut butter. As for fillings, I found that if you have a bunch of options it makes it pretty fun. Here is a list of suggested fillings:   Carrots, Mung Beans, Sprouts, Bamboo Shoots, Cabbage, Avocado  Water Chestnut, Mint, Cilantro, Shrimp.  Have you ever made your own Spring Rolls? Any suggested fillings?
