I have never been too fond of peanuts, but I liked this quite a bit. Whenever Leigha makes carmel or brittle, I am always surprised that it has the slightest taste of coconut. I know that she doesn't
actually add coconut and I don't know what causes that taste. As I was eating this brittle, I realized that if we substituted almonds for the peanuts, this brittle wouldn't last nearly as long.
